Little quiches always seem present at our various family celebrations — another tradition of mum's (Julie C's) that I am now happily perpetuating. My kids love the fact that they are small, have a crispy cheese top and flaky pastry base. And you can 'hide' all manner of goodies in them! My son has christened them "Messy Cheese Pies". Buying the pastry cases simplifies the preparation.

  • 12 bought mini puff pastry cases
  • 2 eggs
  • 2 tablespoons milk
  • ½ cup grated tasty cheese
  • SAVOURY FILLINGS:
  • ½ cup chopped ham
  • 1 small tomato, chopped
  • OR
  • ½ cup cooked chicken, chopped
  • ¼ cup corn kernels
  • OR
  • ½ cup diced bacon, cooked
  • ¼ cup frozen peas
  • OR
  • 1 cup sliced mushrooms, cooked in 1 teaspoon butter
  • OR
  • ½ cup tuna
  • ¼ cup corn kernels

Preheat oven to 180C. Place pastry cases on a baking tray. Divide filling between cases. Whisk eggs and milk together in a jug, pour into pastry cases to just below the top. Sprinkle each case with grated cheese. Bake for 10-15 minutes until golden.

Notes:

  • If you can't find mini puff pastry cases in your supermarket or deli, it doesn't take that much longer to make your own from bought pastry sheets
