Mince stroganoff

This mince stroganoff is a great dish to have when you come indoors on a cold winter's day. It's rich, fast, flavoursome and hearty. Find more on Kidspot New Zealand.


  • 3 tbsp vegetable oil
  • 500g beef mince
  • 2 onion, peeled and sliced
  • 3 cloves garlic, crushed
  • 1/2 cup tomato paste
  • 1 tbsp sweet paprika
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 400g mushrooms, sliced
  • 2 cups beef stock
  • 300ml sour cream


In a frying pan, heat the oil and brown the beef mince.

Add the onions, mushrooms and garlic to the pan and fry for 5 minutes or until the onions are translucent.

Add the tomato paste and paprika and cook off for 2 minutes.

Whisk in the beef stock and season with the salt and pepper.

Simmer for 5 minutes.

Stir sour cream in just before serving.
