Apricot topping

Ingredients:

  • 250g dried apricots
  • water to cover
  • 2-3 tbsp honey

Method:

In a small saucepan add apricot and enough water to cover.

Leave to soak overnight.

On a medium heat simmer the apricots until they are very soft.

Drain cooking liquid and reserve.

Puree the apricots in a food processor or blender. If they are a little dry you can add the honey or the reserved cooking liquid.

Return to the saucpan and simmer until all is well combined and then you have the required consistency.

Notes:

  • This is a great sauce for toddlers to have on desserts.
  • Babies under 12 months should not be having honey due to the risk of botulinium so you can leave it out in this case.
  • If you reduce it a little it makes a nice spread to go in between layers of cake.
