Cinnamon rolls

Ingredients

Dough

  • 3 teaspoons yeast
  • 1 cup warm milk
  • 1/2 cup sugar
  • 1/2 cup melted butter/margarine
  • 1 teaspoon salt
  • 2 eggs
  • 4 cups plain flour

 

Filling

  • 1 cup brown sugar
  • 2 1/2 tablespoons cinnamon
  • 1/3 cup softened butter/margarine

 

Icing

  • 8 tablespoon softened butter/margarine
  • 1 1/2 cup caster sugar
  • 1/4 cup cream cheese
  • 1/2 teaspoon vanilla
  • pinch of salt

Method

Mix all dough ingredients until you’ve got a smooth ball of dough (You can use your bread machine for this part).

Let the dough rise until doubled – this will take about 1 hour.

Punch down and roll out to 55cm x 40cm x 1/2cm thick. Brush with softened butter/margarine and sprinkle the brown sugar and cinnamon over it. Roll up longwise.

To cut into rolls I use a piece of thread and go under and criss cross the thread so that it cuts through. Dental floss works well too.

Place on a greased cookie sheet and bake at 180ºC for 15 minutes or until brown around the edges.

While baking, beat together the icing ingredients and spread generously on each roll while still warm. Enjoy!
