Orange and oatbran muffins

Ingredients

  • 60g melted butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 oranges, juiced + 1 orange, rind grated
  • 1½ cups self-raising flour
  • 1 cup oat bran

Method

Preheat oven to 180°C.

Line 12-hole muffin/cupcake pan with paper cases.

Mix butter, sugar, eggs, juice and rind together.

Gently stir in flour and oat bran until just combined.

Spoon into paper cases.

Bake until golden, around 20-25 minutes.
