Coconut macaroons recipe
Gluten free, Lactose free, Nut free
- 2 cups desiccated coconut
- ½ cup caster sugar
- 2 egg whites
Preheat oven to 180°C. Line a baking tray with baking paper. Place coconut, sugar and egg whites in a bowl, mix to combine. Roll 2 teaspoonsful of mixture into balls and place on baking tray.
Bake for 10 minutes until golden. Cool on a tray or wire rack.
- These are my new favourite! How easy to make! Gluten-free, nut-free and relatively low fat (don’t think about the coconut).
- I made small (2 teaspoonfuls) and larger ones (2 tablespoonfuls) to cater to the varying appetites of my family!
