Egg men with crispy bacon toasts recipe
- 4 eggs
- 4 rashers middle bacon
- 4 slices bread
- 250g cherry or grape tomatoes, halved (optional)
Place eggs in a saucepan and cover with water. Bring to the boil and simmer for 3 minutes (soft boiled) or until cooked to your liking. Meanwhile, remove rind from bacon, cut in half and cook in a non-stick frypan until crispy and brown on both sides.
Toast the bread and spread with butter or margarine.
Carefully juggle eggs into egg cups, cut the bread into fingers and top with crispy bacon and tomatoes (if using).
- Nothing like eggs and bacon to make a great quick, easy and cheap meal!
- If you don’t have egg cups with cute little faces, use a black texta to draw on the eyes and mouth. The kids will love to do this (make sure eggs are not too hot) and then bashing them to peel the shell off.
