Lemon coconut surprise recipe

Ingredients:
- 1 cup desiccated coconut
- 2 tsp lemon rind
- 375 g White Chocolate Melts, melted
- 30 red cherries
- 1 cup coconut flakes
Method:
Mix desiccated coconut with lemon rind, add White Chocolate Melts, combine well, cool.
Shape teaspoonfuls coconut mixture around cherry.
Roll into balls, coat with coconut flakes.
