Sticky toffee pudding recipe

Serving Size:




  • 250 g pitted dates
  • 1 cup water
  • 1 tsp bicarbonate of soda
  • 1 tsp vanilla essence
  • 150 g butter
  • 1 cup caster sugar
  • 2 eggs
  • 1 1/4 cups plain flour
  • 1/4 cup Baking Cocoa

Caramel sauce
  • 125 g butter
  • 1 cup brown sugar
  • 200 ml cream
  • 100 g White Chocolate Melts


Preheat oven to 180°C. Line a 28cm x 18cm lamington tin with baking paper.

Place dates and water in a small saucepan. Bring to the boil, then simmer 10 minutes until dates are softened and water has been absorbed. Stir in bicarbonate of soda and vanilla and allow to cool.

Beat butter and sugar until light & fluffy, Add eggs one at a time and beat well.

Fold in date mixture and combined sifted flour and Baking Cocoa.

Spread into prepared tin and bake 30-35 minutes until cooked. Cool slightly before removing from tin.

To make the caramel sauce, place butter, sugar and cream in a saucepan over a low heat and heat until melted.

Remove from heat, stir in White Chocolate Melts and stir until melted.

Serve warm cake with sauce.
