Garlic roasted potatoes recipe
- 1kg small new potatoes
- 6 cloves garlic, crushed
- 4 tbsp olive oil
- 4 tbsp parsley, chopped
- Salt and pepper
Preheat the oven to 180°C.
In a large pot, place the potatoes and enough water to cover. Bring to the boil, salt and simmer for 5 minutes.
Drain water and add olive oil and crushed garlic. Toss to coat.
On a baking tray, lay the potatoes and place in the oven for 15 minutes.
Sprinkle with parsley, turn and put back into the oven for further 15 minutes.
- Serve these with a good sprinkle of Maldon sea salt and freshly ground pepper.
- If you don't have chats, you can cut larger potatoes into smaller pieces and follow the recipe.
