Garlic roasted potatoes recipe

This garlic roasted potatoes recipe recipe is a great way to liven up potatoes for a delicious side dish. Find more on Kidspot New Zealand



  • 1kg small new potatoes
  • 6 cloves garlic, crushed
  • 4 tbsp olive oil
  • 4 tbsp parsley, chopped
  • Salt and pepper


Preheat the oven to 180°C.

In a large pot, place the potatoes and enough water to cover. Bring to the boil, salt and simmer for 5 minutes.

Drain water and add olive oil and crushed garlic. Toss to coat.

On a baking tray, lay the potatoes and place in the oven for 15 minutes.

Sprinkle with parsley, turn and put back into the oven for further 15 minutes.


  • Serve these with a good sprinkle of Maldon sea salt and freshly ground pepper.
  • If you don't have chats, you can cut larger potatoes into smaller pieces and follow the recipe.
