Chocolate caramel tarts recipe

  • 1/3 dough from the Christmas tree biscuits
  • Cupcake papers and rice for baking blind
  • 380g tin Caramel condensed milk
  • 100g dark chocolate


Prepare the dough as per the Christmas tree biscuits recipe. Wrap 1/3 dough in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 180°C.

Select a 24 hole or 2 x 12 hole cup cake pan (not muffin size).

Roll dough between two pieces of baking paper until 2-3mm thick.

Use a scone cutter slightly larger than the cupcake hole to cut circles of dough. Place circles in holes, place small cupcake papers on top of pastry and place 2 teaspoons of rice in each cupcake paper. Bake blind for 10 minutes or until tart base is turning golden brown.

Remove from oven, allow to cool for 10 minutes, then remove cupcake papers. Keep the rice for future 'blind baking' or discard with the cupcake papers.

Spoon 1-2 teaspoons of caramel into each tart case and use a knife to flatten surface.

Place chocolate in microwave on medium heat for 1 minute, stir and then cook for another minute or until melted. Spread a teaspoonful of chocolate over the top of each caramel-filled tart.



  • The kids will love helping with rolling out and cutting dough circles, spooning in the caramel and spreading over the chocolate. And eating the caramel and licking all the chocolate off the knife, "Don't lick the knife!"
  • I made the tart bases the same day as I baked the star biscuits for the Christmas trees, stored the tart bases in an airtight container overnight and then filled and chocolate coated the next day.
  • The Nestle caramel looks a bit yuck when you open the tin, but tastes suitably caramel-y and is easy to spoon into the cases.
  • If you want to make 72 tarts, use all the Christmas tree biscuit dough (and use 3 tins of caramel and 300g chocolate.
  • I was going to include a fruit mince pie recipe. But they are certainly not popular in my house nor with many of the friends and family I quizzed about their "Fruit mince pie Feeling". A chocolate caramel tart is a wonderful substitute.
