Lemon and ginger baked cheesecake recipe

Cheesecakes are a popular dessert. Try this baked cheesecake that uses gingernut biscuits as its base and has a tangy lemon cheesecake filling. Find more on Kidspot New Zealand's recipe finder



  • 8 Gingernut biscuits
  • 8 Nice biscuits
  • 100g butter, melted
  • 250g cream cheese
  • Zest of one large or two small lemons
  • 1 tbsp lemon juice
  • ½ tsp vanilla essence
  • ½ cup white sugar
  • 1/4 cup milk
  • 2 eggs


  • 2 tbsp ground ginger
  • 1 tsp ground cinnamon
  • 1 cup sour cream
  • ½ tsp vanilla essence
  • 2 tbsp white sugar


Preheat oven to 150°C.

Crush biscuits in plastic zip lock bag or whizz through food processor until they resemble small crumbs.

Place in a bowl, add melted butter and mix, and then press into greased small springform tin.

In a mixing bowl, beat the cream cheese until it is a light smooth texture. Adding each ingredient one at a time, beating in between each addition, add the lemon zest, lemon juice, sugar, milk, vanilla essence and ginger and eggs. Ensure the mixture is smooth.

Pour the mixture on to the top of base and put into the oven for 25-30 minutes until it sets.

Combine in a bowl the sour cream, vanilla, sugar, ginger and cinnamon in a bowl. Spread over the top of the cake and put back into the oven for another 10-15 minutes until set again.

Refrigerate for five hours before serving.


  • I also like to make this recipe in a smaller size. They taste and turn out the same but they look really cute.
  • Maybe I have lemon and ginger on the brain because I have a cold? Whatever the reason, this is a really tasty recipe.
  • This is also super-quick with not a lot of washing up and no fancy mixers - good honest cooking - we love that!
