Goat's cheese toasts recipe
- 1 french baguette
- 120g goats cheese
- 1 small container, marinated semi-dried tomatoes
- 100g baby rocket
- 1 tbsp olive oil
- 1 clove garlic
- canola spray
Preheat oven to 180°C.
Slice baguette into 1cm slices and spray both sides with canola oil.
Place on a baking tray and cook for 10-15 minutes making sure to turn halfway.
Remove from oven and rub with the halved garlic clove.
Toss rocket in olive oil and top each baguette slice with a little bunch.
Spoon a teaspoon of goats cheese on top of the rocket.
Add a semi-dried tomato and a little cracked pepper.
- These are perfect served with a glass of wine when friends pop around.
- I make the baguettes ahead of time and assemble when my guests arrive.
