Crunchy roast potatoes recipe

These crunchy roast potatoes recipe combine roasted potato and sweet potato with garlic and rosemary. A great vegetable dish for Christmas dinner. Find more on Kidspot New Zealand's recipe finder



  • 500g sweet potato
  • 500g desiree potatoes
  • 1 tablespoon fresh rosemary, chopped
  • 2 garlic cloves, crushed
  • 1/3 cup (80mL) olive oil


Preheat oven to 220°C.

Peel and cut the potatoes into 4cm chunks. Steam for two minutes until just tender and set aside to cool.

Place potatoes in a large baking tray, toss with oil, rosemary and garlic.

Roast for about 30-40 minutes; turn the potatoes occasionally until they are golden. Serve.



  • This recipe includes sweet potato as well as white potatoes, but you can choose to roast just one or the other if you prefer.
