Grilled peaches, marscarpone and panettone french toast recipe
- 8 thick slices of panettone
- 3 eggs
- 185mL (3/4 cup) milk
- 30g unsalted butter
- 8 just-ripe peaches
- 3 tablespoons vanilla sugar
- 250g mascarpone
- 1 teaspoon cinnamon
- 1 tablespoon icing sugar
Whisk the eggs and milk together in a bowl.
Place the panettone in a shallow dish and pour the egg mixture over. Leave for a few minutes to soak in, then turn the bread over and soak the other side.
Heat a large non-stick frying pan over medium-high heat and melt half the butter. Add four slices of bread and fry for about 1 minute or until golden, turn over and cook until other side is golden. Repeat with other 4 slices.
Meanwhile, preheat grill to high heat. Halve peaches and place on a baking tray. Sprinkle peaches with vanilla sugar and grill for 4-5 minutes.
Beat cinnamon and icing sugar into mascarpone until well combined.Place a slice of panettone on each plate, top with two peach halves and a large dollop of cinnamon mascarpone.
- Vanilla sugar can be made at home by filling a small glass jar with caster sugar and pushing a vanilla pod into the centre. You can refill the jar several times before replacing the pod.
