Cornbread recipe

This high protein cornbread can be whipped up in no time. It's lovely honey sweetness is best straight fom the oven. Find more on Kidspot New Zealand's recipe finder

Ingredients:

  • 1 cup cornmeal (polenta)
  • 2/3 cup wholewheat flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 cup milk
  • 1/4 cup powdered milk
  • 3 tbsp honey

Method:

Preheat oven to 190°C. Line a loaf pan with baking paper and set aside.

Mix the powdered milk into the milk.

Mix all dry ingredients together.

Mix wet ingredients together and add to dry.

Beat until smooth. Pour into lined tin.

Bake for 20-25 minutes.

Notes:

  • This tastes so good fresh from the oven.
  • My kids like to take two slices of cornbread for morning tea spread with butter.
  • When looking for cornmeal at the supermarket, you may see it sold as polenta on the pack.
