Zingy zucchinis recipe
These tomato roasted zucchinis are sprinkled with cheese and slowly baked to keep them moist. The basil adds flavour and the tomato, zing. Find more on Kidspot New Zealand's recipe finder.
- 1 kg zucchinis, thickly sliced
- 4 tbsp chopped basil
- 500ml passata
- 60g cheese, grated
Preheat oven to 180°C.
In a baking dish, lay and sprinkle over chopped basil.
Pour over passata and sprinkle with cheese.
Cover with foil or a lid and bake for 30 minutes.
- I like to sprinkle a little garlic salt over these zucchinis but that may be too strong for toddlers.
