Apricot muesli slice recipe
- 150g butter
- 2 tbsp honey
- 200g dried apricots, chopped
- 1 cup self-raising flour
- 1 cup muesli (untoasted)
- 1/2 cup sultanas or raisins
- 1/2 cup castor sugar
- 2 eggs, lightly beaten
Preheat the oven to 180°C. Line a 20cm x 20cm pan with baking paper and set aside.
Melt the butter for 30 seconds in the microwave or over a low heat in a saucepan. Stir in the honey and leave to cool.
In a bowl, combine the flour, sugar, muesli, sultanas and apricots.
Mix in the eggs and cooled honey/butter mixture.
Pour into the baking pan and bake for 25-30 minutes.
- This is a cross between a cake and a slice. It is very moist and crumbly.
