Poached egg recipe
- 2L water
- 1/4 cup vinegar
- 1 tsp salt
- 1 egg
Break egg into a small bowl.
Bring water to the boil in a medium saucepan.
Add salt and vinegar.
Reduce heat so that the water just comes off the boil.
Using a slotted spoon, swirl the water in a circle in the saucepan to make a whirlpool and slide the egg into the centre.
Leave it to cook for 90 seconds.
Lift out gently with the slotted spoon.
Sliding the water into water while it is off the boil is essential, otherwise the motion breaks the white away into pieces.
Swirling the water makes the egg strands wrap around the yolk.
