Healthy chicken schnitzel recipe
This chicken schnitzel recipe is a healthy way to have your favourite chicken dish without the unwanted kilojoules. It's an easy recipe and will fast become a favourite on your weekly menu.
- 3 chicken breasts
- 6 egg whites, lightly beaten
- 3 cups dry breadcrumbs
- olive oil spray
Preheat oven to 220 C. Line a baking tray with baking paper.
Slice chicken breast through the centre. Place each slice between 2 sheets of cling film and flatten with a meat mallet until they are of even thickness.
Coat each fillet in egg white and then cover in bread crumb.
Lay on the baking tray and liberally spray each side with the olive oil spray.
Bake for 20 minutes, stopping to turn halfway through cooking.
