Mini Whoopie pies recipe

Mini Whoopie pies are an all-American cake that can be recreated from a box cake mix at home. Find more on Kidspot New Zealand's recipe finder.



  • 1 Betty Crocker Devil's food cake mix
  • 3 eggs
  • 1/4 cup oil
  • 180ml water
  • 2 cups marshmallows
  • 3/4 cup icing sugar, sifted
  • 100g unsalted butter
  • 250g cream cheese


Preheat oven to 180°C. Line two baking trays with baking paper and set aside.

Prepare cake mix as per direction using eggs, oil and water.


Place heaped tablespoons on the baking tray, making sure to leave 4 centimetres between each one. Bake for 8-10 minutes. Leave on tray to cool.

In a mixing bowl, place marshmallows. Heat in microwave on high for two minutes. Add butter, icing sugar and cream cheese and mix until thoroughly combined.

Place filling in refrigerator and chill.

Peel cakes off the baking paper and sanwich filling in between two cakes.
