Oaty raisin biscuits recipe
- 1 tsp baking powder
- 1/2 tsp bicarbonate soda
- 1/2 tsp salt
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/4 cup apple sauce
- 1 egg
- 1 tsp vanilla extract
- 2 cups rolled oats
- 1 cup plain flour
- 1/2 cup raisins
- 2 tbsp unsalted butter
Preheat the oven to 180°C. Line a baking sheet with baking paper and set aside.
In a bowl, sift the flour, salt, baking powder, baking soda and salt.
In a separate bowl, cream the butter, brown sugar and sugar for one minute. Add the egg, baby applesauce and vanilla extract. Mix for 2 minutes.
While the mixer is running, gradually add the flour to the butter and sugar and mix until combined.
Fold in the oats and raisins. Drop teaspoonfulls onto the baking tray about 3 cm apart and bake for 10-12 minutes.
- I actually used a tin of baby apples for this recipe because it was just the right amount. You can substitute sultanas for the raisins if you prefer.
- These need to be watched carefully in the oven. They brown very quickly.
