Madeira cake recipe

his simple madeira cake is perfect for lunchboxes or just for afternoon tea with a swipe of butter. It has a fine texture with golden crumbs. Find more on Kidspot, New Zealand's recipe finder.

Ingredients:

  • 125g butter, softened
  • 1 cup caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups self-raising flour
  • 1/2 cup milk

Method:

Preheat oven to 180°C. Line a loaf tin with baking paper.

In a bowl, using a mixer cream the butter and sugar and add the vanilla.

Add the eggs one at a time mixing well with the milk.

Add the flour and mix for 2 minutes.

Pour into loaf tin and bake for 50-55 minutes.

Notes

  • This golden cake is a great lunchbox filler.
  • If you are looking for something a bit fancier you can fill it with jam and cream.
