Caramel filling recipe

Caramel filling is made from condensed milk and is a great topping and filling for desserts. You can put in tart cases, top cupcakes with it and use it in confectionary. Find more on Kidspot, New Zealand's recipe finder.



  • 1 tin condensed milk


Place the tin of condensed milk in a medium saucepan, unopened on its side.

Cover the tin with cold water and place on a high heat, bringing it to the boil. Once boiling, reduce heat to a simmer and cook for 2 hours.

Check frequently to make sure the tin is covered in water and that the water does not boil away. Top up water and return to a simmer.

Remove from heat and cool thoroughly before opeing the tin.



  • I always boil at least 2-3 tins at a time because it uses the same amount of energy and it is great to have on hand for emergency desserts.
  • A great way to use this is to fill a sweet shortcrust pastry shell or small tart cases with it as a take-along dessert. You can serve them topped with chocolate ganache or whipped cream.
