Weetbix slice with chocolate icing recipe

This economical Weetbix slice is great for those on a budget. You can pop it into lunchboxes and the chocolate icing will make you feel rich!! Find more on Kidspot, New Zealand's recipe finder.



  • 1 cup self-raising flour
  • 1 cup dessicated coconut
  • 3/4 cup brown sugar
  • 3 Weetbix crushed
  • 125g butter, melted
  • 200g chocolate melts
  • 30g butter
  • 1/4 cup 100's and 1000's


Preheat oven to 180°C. Line a slice tray with baking paper and set aside.

In a bowl, combine the flour, coconut, brown sugar and Weetbix.

Stir in the melted butter and mix well.

Press mixture in slice tin and smooth down with the back of a metal spoon.

Bake for 20 minutes.

Place chocolate and butter in a glass bowl and microwave at 30 second intervals, stopping to stir for 15 seconds each time.

When all melted, pour the chocolate mixture over the Weetbix slice and sprinkle with 100's and 1000's. Refrigerate for 15 minutes.
