Slow roasted tomatoes recipe

These delicious slow roasted tomatoes are packed full of delicious concentrated flavour. Roast them for as long as you can wait. Find more on Kidspot New Zealand.



  • 6 vine-ripened tomatoes
  • 12 tsp brown sugar
  • 1/4 cup balsamic vinegar
  • 6 cloves garlic, halved
  • 1/4 cup olive oil


Preheat oven to 180°C. Spray a baking dish with canola oil.

Cut tomatoes into halves horizontally and place in baking dish.

Place 1 tsp of brown sugar on each tomato.

Place half a garlic clove on top of each tomato.

Drizzle with balsamic vinegar and then olive oil.

Bake for 45mins-1 hour.



  • These slow roasted tomatoes are full of concentrated sugars and taste delicious in salads and on sandwiches.
  • You can bake them for longer if you want to dry them out more. Just lower the temperature to 150°C.
