Slow roasted tomatoes recipe
- 6 vine-ripened tomatoes
- 12 tsp brown sugar
- 1/4 cup balsamic vinegar
- 6 cloves garlic, halved
- 1/4 cup olive oil
Preheat oven to 180°C. Spray a baking dish with canola oil.
Cut tomatoes into halves horizontally and place in baking dish.
Place 1 tsp of brown sugar on each tomato.
Place half a garlic clove on top of each tomato.
Drizzle with balsamic vinegar and then olive oil.
Bake for 45mins-1 hour.
- These slow roasted tomatoes are full of concentrated sugars and taste delicious in salads and on sandwiches.
- You can bake them for longer if you want to dry them out more. Just lower the temperature to 150°C.
