Mushroom soup recipe
- 2 brown onion, diced finely
- 100g butter
- 500g mushrooms, finely sliced
- 100g plain flour
- 1L chicken stock
- 1 tbsp lemon juice
- 500ml milk
- salt and pepper
In a saucepan, heat the butter and fry the onions until translucent.
Add the mushrooms and cook gently for 5 minutes.
Stir in the flour and cook for 1-2 minutes.
Remove from the heat and gradually whisk in the chicken stock.
Return to the heat and bring to the boil until the soup thickens.
Stir in the milk and lemon juice and simmer for 20 minutes.
Season with salt and pepper.
- This is a really flavoursome start to any meal.
- I was tempted to add herbs etc to this recipe but the flavour of the mushrooms really shines through.
