Mushroom soup recipe

This mushroom soup is easy and rich in flavour and really easy to make. It is a great dinner party starter that you can make ahead. Find more on Kidspot, New Zealand's recipe finder.



  • 2 brown onion, diced finely
  • 100g butter
  • 500g mushrooms, finely sliced
  • 100g plain flour
  • 1L chicken stock
  • 1 tbsp lemon juice
  • 500ml milk
  • salt and pepper


In a saucepan, heat the butter and fry the onions until translucent.

Add the mushrooms and cook gently for 5 minutes.

Stir in the flour and cook for 1-2 minutes.

Remove from the heat and gradually whisk in the chicken stock.

Return to the heat and bring to the boil until the soup thickens.

Stir in the milk and lemon juice and simmer for 20 minutes.

Season with salt and pepper.
