Toffee drops recipe
- 3 cups sugar
- 1/2 cup water
- 1/2 cup vinegar
- 2 tbsp butter
- 1/2 tsp cream of tartar
- 1 tsp lemon juice
Line a slice tin with baking paper and set aside.
Place all of the ingredients in a saucepan and stir until dissolved.
Bring to the boil and simmer for 15- 20 mins until the mixture gets to hard crack stage. To test, drop a few drops into a glass of cold water and if it sets into a hard ball, then it is ready.
- This golden toffee needs to be watched carefully as it gets to the end of the cooking time. It goes dark very quickly.
- I first saw this recipe as butterscotch but it bears little resemblance to what I know as butterscotch. I have always thought that butterscotch was made with brown sugar and cream.
- You could tie these up into little cellophane wrappers and pop them into a jar to give as a gift.
