- 1 cup white sugar
- 1 cup brown sugar
- 1½ cups thickened cream
- 2 tbsp salt flakes
- 2 tsp vanilla extract
Line a small square baking tin, 20cm x 20cm with baking paper and set aside.
In a nonstick pot, place all of the ingredients except for the vanilla.
Bring to the boil and stir continually for about 15 minutes or until the liquid reaches118°C on a candy thermometer. This is called "soft ball" stage.
Add the vanilla and stir in.
Pour into the tin and leave overnight. Using an oiled knife, cut into squares. Store on baking paper at room temperature.
