Vanilla fudge recipe
- 300ml milk
- 350g caster sugar
- 100g unsalted butter
- 1 tsp vanilla extract
Line a slice tin with baking paper and set aside.
In a small non-stick saucepan, heat the milk, sugar and butter, stirring until all is dissolved.
Bring to the boil and simmer, stirring constantly for for 15-20 minutes or until it reaches soft ball stage ( 115°C-118°C).
Remove from heat and pour in vanilla extract. Beat with a wooden spoon until the mixture starts to thicken. Pour into the slice tin and cool. Refrigerate for 4 hours and remove from the tin and slice into squares.
- This fudge tastes like old-fashioned lollies called milk bottles.
- The only way this recipe will work is if you do not have the heat too high and you stir and stir it.
- If it catches on the bottom of the saucepan it is salvageable. Just run it through a strainer before you put it into the tin.
