Butter cake recipe

Ingredients:
- 250g butter, softened
- 1 cup caster sugar
- 2 tsp vanilla extract
- 3 eggs
- 2 cups self-raising flour, sifted
- 2/3 cup milk
Method:
Preheat oven to 180°C. Line a 20cm square cake pan with baking paper and set aside.
In a mixing bowl, using a hand mixer, beat the butter, sugar and vanilla until pale and fluffy.
Beat the eggs in one at a time until combined.
Add half of the flour and half of the milk and fold into the mixture using a spatula. Add the the rest of the flour and milk and continue to fold until all combined.
Pour cake mix into the cake tin and smooth top.
Bake for 55-60 minutes or until a skewer inserted into the centre of the cake comes out clean.
Leave to cool in tin for 10 minutes and then turn out onto a wire rack to continue cooling.
Notes
- This mixture is quite thick and fluffy in comparison to some cake mixtures.
