Butter cake recipe

Butter cake is quite a dense style of cake and is perfect to serve for afternoon tea when you have guests. It also makes a great base for any birthday cake recipe. Find more on Kidspot New Zealand.



  • 250g butter, softened
  • 1 cup caster sugar
  • 2 tsp vanilla extract
  • 3 eggs
  • 2 cups self-raising flour, sifted
  • 2/3 cup milk


Preheat oven to 180°C. Line a 20cm square cake pan with baking paper and set aside.

In a mixing bowl, using a hand mixer, beat the butter, sugar and vanilla until pale and fluffy.

Beat the eggs in one at a time until combined.

Add half of the flour and half of the milk and fold into the mixture using a spatula. Add the the rest of the flour and milk and continue to fold until all combined.

Pour cake mix into the cake tin and smooth top.

Bake for 55-60 minutes or until a skewer inserted into the centre of the cake comes out clean.

Leave to cool in tin for 10 minutes and then turn out onto a wire rack to continue cooling.


  • This mixture is quite thick and fluffy in comparison to some cake mixtures.
