Roasted garlic and lime aioli recipe
- 1 head garlic
- 1 tsp olive oil
- 1 cup whole-egg mayonnaise
- 3 tbsp lime juice
Preheat oven to 180°C. Cut the garlic head in half crossways. Place in foil and drizzle with oil. Close the foil over the garlic and roast for 45 minutes.
Remove from foil and squeeze the garlic into a bowl. Add the mayonnaise and whisk in the lime juice a little at a time to taste.
