Ginger biscuits recipe

These spicy ginger biscuits will fill up the biscuit barrel and are made in just one pot.They aren't too hard on the teeth and the kids will love them. Find more on Kidspot New Zealand.



  • 250g butter
  • 1 cup brown sugar
  • 3/4 cup golden syrup
  • 2 tbsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp bicarbonate soda
  • 1 tbsp boiling water
  • 3 cups plain flour, sifted


Preheat oven to 180°C. Line two baking trays with baking paper and set aside.

In a saucepan, melt the butter with the brown sugar, golden syrup, ginger and cinnamon. Whisk together until well combined.

Dissolve the bicarbonate soda into the boiling water and add to the butter mixture.

Using a wooden spoon, mix the flour into the butter mixture until well combined.

Roll teaspoonfuls into balls and flatten with the tines of a fork. Leave room for each biscuit to spread.

Bake for 10 minutes. Cool on oven trays.


  • If you like your biscuits really hard you will need to extend the cooking time by an extra 15 minutes.
  • I made about 30 biscuits with this recipe.
