3 ingredient mini muffins recipe

These muffins have just 3 ingredients and you can have them ready in 20 minutes. They are a perfect after school snack and a great addition to lunch boxes. Find more on Kidspot New Zealand.



  • 1 cup self-raising flour
  • 3 tbsp sugar
  • 1 cup thickened cream


Preheat oven to 180°C fan forced. Spray a 24 cup mini muffin tin with cooking spray and set aside.

In a bowl, mix the flour and sugar together.

Pour in the cream and fold mixture together using a spatula until all ingredients are just wet.

Spoon into the muffin tin and bake for 10-15 minutes.

Leave to cool in the tin for 2 minutes and then cool further on a wire rack.


  • Before you bake it the texture of this mixture is lumpy.
  • I use two teaspoons to fill the muffin tin. Just scoop with one spoon and use the second spoon to scrape it into the tin.
  • You can use your favourite flavourings for this muffin - 1/3 cup of choc-chips will turn them into choc-chip mini muffins.
