Balsamic glaze recipe
Balsamic glaze is very versatile and is made by concentrating balsamic flavours. Use it in sweet and savoury dishes and drizzled over ice cream. Find more on Kidspot New Zealand.
- 2 cups balsamic vinegar
- ½ cup brown sugar
- ¼ cup maple syrup
In a small saucepan, place all the ingredients and whisk together. Bring to the boil and simmer until you have reduced the liquid by half. Store in the refrigerator.
- If you are a purist and have plenty of time, use just the balsamic vinegar and reduce it by two-thirds. Adding sugar and maple syrup is just a way of hurrying up the caramelisation process.
- Near the end of the reduction process, you’ll need to be careful it doesn’t burn.
