  • 5 ripe pears
  • 2 tsp lemon juice
  • ½ tsp vanilla extract
  • 1½ tsp cornflour
  • 2 tbsp brown sugar
  • 1/3 cup wholemeal flour
  • 1/2 cup rolled oats
  • 2 tbsp brown sugar
  • 6 ginger biscuits
  • pinch of cinnamon
  • 50g butter, melted

Heat oven to 190°C (170°C fan-forced).

Peel pears, cut in half, remove cores and dice.

Combine lemon juice, vanilla extract, cornflour and sugar with pears in a bowl.

Pulse dry topping ingredients in a food processor until finely chopped. Add melted butter and pulse once more.

Pour pears into a baking dish. Top with crumble mixture and bake for approx 20 minutes, until crispy.

Serve with ice-cream.

  • The cornflour will thicken up the pear juices as the crumble cooks.
  • Plain yoghurt is also a great accompaniment with this dessert.
