Banana bread recipe

Preheat oven to 180 degrees C or 160 degrees C (fan-forced) Grease and lightly flour an 8-cup bundt or loaf pan Beat butte

  • 185g softened butter
  • 1 1/4 cups caster sugar
  • 2 teaspoons vanilla essence
  • 3 eggs
  • 1 1/4 cups mashed banana
  • 2 1/4 cups self-raising flour
  • 1/4 teaspoon bicarbonate of soda
  • 1/3 cup milk

Method:

Preheat oven to 180 degrees C or 160 degrees C (fan-forced)

Grease and lightly flour an 8-cup bundt or loaf pan

Beat butter, sugar and vanilla in a small bowl using an electric mixer until light and fluffy, add eggs one at a time

Beat until just combined, then beat in mashed banana

Transfer to a large bowl

Stir in sifted flour and bicarb soda, then stir in milk, spread mixture into prepared pan

Bake in oven for about 40 minutes or until cooked when tested

Stand cake in pan for 10 minutes

Turn onto wire rack to cool.
