Pumpkin, baked bean and cheese mash recipe
This flavour-packed pumpkin, baked bean and cheese mash is overflowing with iron, folate, protein and fibre - and it tastes sensational too! This is one dish your little one will find impossible to refuse.
- 1/2 cup pumpkin, diced
- 1/2 cup baked beans
- 2 tbsp cheddar cheese, grated
Place pumpkin in a medium saucepan and cover with water. Bring to the boil over medium-high heat, and simmer on medium for 8-10 minutes or until cooked.
Drain water from saucepan, mash together with baked beans and stir in grated cheese. Serve warm.
Place pumpkin in a microwave-safe container and cover with cling wrap, leaving a corner uncovered.
Cook on high for 4 minutes or until cooked.
