Chicken haloumi salad recipe

Want a quick and healthy dinner the whole family will love? Throw together this gluten-free and egg-free salad packed with lots of yummy flavours.

Serves 4



  • 500 g chicken breast (grilled, lean)
  • 8 cup rocket mix with spinach
  • 20 walnuts
  • 100 g haloumi
  • 1/2 cup semi-dried tomato
  • 1 bunch asparagus (grilled)
  • 1 tbs balsamic vinegar
  • 1 mango (sliced, skin off)


Grill chicken breast, haloumi and asparagus over medium heat.

Combine remaining ingredients together and dress with vinegar.
