Malteser cookies recipe
Big, chewy, malted chocolate cookies, featuring everyone's favourite movie candy - Maltesers.
- 115 g butter
- 150 g caster sugar
- 110 g brown sugar
- 70 g cocoa
- 1 tsp vanilla extract
- 2 eggs
- 225 g plain flour
- 1 tsp baking powder
- 30 g Ovaltine
- 100 g Maltesers (chopped)
Preheat the oven to 160C (140C fan-forced) and line two trays with baking paper. Melt the butter about halfway in a small saucepan, and then leave to finish melting off the heat.
Place the sugars, cocoa and vanilla into a large mixing bowl and add the just-warm melted butter. Stir together, then add in the eggs and beat until smooth and combined.
Add the flour, baking powder and Ovaltine and stir about 3/4 of the way in then add the Maltesers and finish mixing. Place 1/4 cup sized balls of dough onto the lined trays, and press down slightly - leave plenty of room for these to expand.
Bake the cookies for 14-17 minutes, or until spread. They will be very soft. Leave to cool completely on the trays.
- These cookies are very large, you could easily halve the size for a smaller serve.
- Replace the Maltesers with plain chocolate or nuts, if desired.
- These chewy cookies make excellent ice cream sandwiches!
