Mars bar muffins recipe

Rich and indulgent cafe-style muffins to make at home.

Makes 12



  • 125 g butter
  • 3/4 cup brown sugar
  • 180 g Mars bar (chopped)
  • 1/2 cup cocoa
  • 2 eggs
  • 3/4 cup self-raising flour
  • 1/2 cup almond meal
  • 1 tsp vanilla extract


Preheat oven to 180C (160C fan-forced). Put patty cake pans into a 12-hole small muffin tin, or 6-holeTexas-sized tin.

Place butter and sugar into a medium-sized saucepan and melt, stirring, over a low heat.

Remove from heat and add 2½ of the chopped Mars bars and cocoa, stir until combined and let mixture cool for 5 minutes.

Whisk in eggs, flour, almond meal and vanilla extract (or use 2tsp vanilla essence). Drop spoonfuls into muffin pans and place a reserved piece of Mars bar on top of each muffin.

Cook for 20 minutes, or until muffins are tested when a skewer inserted comes out clean.


  • These muffins freeze well, so you can always keep a few extra on hand for emergencies!
  • Try drizzling some chocolate or caramel sauce over the top of the muffins.
