Scotch eggs recipe
Crumbed and fried boiled eggs that are great for a picnic lunch as well as a family meal.
- 4 unit eggs (hard-boiled, peeled)
- 3/4 cup plain flour
- 250 g sausage mince
- 1 tsp garlic (minced)
- 1 tbs mixed herbs (chopped)
- 1 unit egg (beaten)
- 1 cup white dried breadcrumbs
Roll the boiled eggs in flour.
Combine sausage meat, garlic, herbs and salt and pepper.
Wrap meat around the hardboiled eggs.
Brush with beaten egg and roll in breadcrumbs.
Fry in hot oil for about 7 minutes.
