Chocolate sprinkle cookies recipe
These crunchy chocolate sprinkle cookies are a fun addition to any party table and also make a great weekend baking project for the kids.
- 185 g butter (softened)
- 1 1/4 cup caster sugar
- 1 unit egg
- 1 tsp vanilla essence
- 1 1/2 cup plain flour
- 3/4 cup cocoa powder
- 1 1/4 tsp baking powder
- 200 g milk chocolate
- 1 packet sprinkles
Place the butter and sugar into the bowl of an electric mixer and mix for 6-8 minutes or until light and fluffy. Add the egg and vanilla essence and mix for a further 2 minutes.
Add the flour, cocoa and baking powder to the mixer bowl and mix on a low speed until just combined and a soft dough forms.
Place the dough onto a large piece of cling wrap and gently flatten. Wrap the dough and place into the fridge for one hour to firm.
Preheat your oven to 190C (170C fan-forced) and line two trays with baking paper. Divide the dough in half and roll one half between two sheets of baking paper until it’s approximately 5mm thick. Use a round cookie cutter to cut out the cookies. Repeat with the other half of the dough until all the dough has been used.
Place the cookies onto the prepared baking trays and bake for 10-12 minutes or until slightly firm to the touch. Remove the cookies from the oven and let them cool on the trays for 5 minutes before carefully transferring to a wire rack to cool completely.
Break the milk chocolate into pieces and place in a microwave-safe bowl. Cook on medium heat for 30 seconds before stirring and cooking for a further 30 seconds or until the chocolate has melted. Dip each cookie into the melted chocolate and decorate with sprinkles.
